We recently sent one grass fed steer to the butcher to be processed into ground beef only. That means all of the quality cuts of meat (steaks, roasts, etc.) are ground together. By doing this we receive a much higher quality ground beef.
If anyone is interested in any beef, please let us know. For those who are new to this email, here's how the ground beef ordering works: it is packaged in 1.25 lb. shrink wrapped packages or in a bag of 25 pre-formed patties (6.25 lbs.) We ask that orders be a minimum of 20 pounds, to keep the logistics manageable. Pricing will be $5.00 per pound.

The beef can be picked up at our farm. We have two pick up dates available beginning this Saturday, August 30th and next Saturday, September 6th. You may pick up your beef between 10:00am and 2:00pm. When placing your order, please notify us as to which date will work for you so we can ensure your beef is together and ready to go.

far as our production methods are concerned, our animals are 100% grass-fed and
100% grass-finished. I emphasize grass-finished because there are some
producers out there that feed grain for the last 60 days and still market their
beef as grass fed. The labeling and marketing claims are not regulated
that tightly. If this is a concern of yours, the best way I recommend you
get to the bottom of the issue would be to visit the farm. If you do
decide to purchase some beef from us (Thanks in advance!) then you will have to
pick it up at our farm anyways. What a pleasant change, since you are not
able to perform your own personal inspection before buying meat from Giant
Eagle or Whole Foods! While at the farm you are more than welcome to take
a look around. You will see the cattle happily grazing and my father can
show you how the management intensive grazing works and explain how the cattle
are moved to fresh pasture every day or two. You will not see a
big smelly feedlot where grain and ethanol by-products are fed. The
difference in impact on meat taste and nutritive quality is quite
dramatic.
If
you would like to learn a little more about grass fed beef from the scientific
viewpoint, I highly recommend Jo Robinson's book "Pasture
Perfect". You can also read a lot on her website www.eatwild.com.
If you can't find the book at a local library, I would be more than happy
to mail you my copy to borrow. I'll need it back though because I am
using it as a resource as I build our website.
