2010  Cheeses

 

 

2010 Cheese delivery schedule:  Weeks of June 8-11, July 13-16, August 10-13, September 7-10, October 5-8, and November 9-12   Cheeses will be put in your boxes each month.  June order is due by 5/25 for June only.  Indicate “June cheese” in the subject line.  After that, you can decide to receive a standing monthly order for the remaining 5 deliveries, due by June 29.  Indicate these with “standing cheese order” in the subject line.  We won’t be able to accommodate different orders each month.  Sorry, no half shares can get the cheese because the weeks don’t always match. 

 

 

Feta  This is made from pasteurized goats’ milk from the Amish family of Sam Byler.  An excellent feta, good for salads and many Greek and other Mediterranean dishes.  $6/half lb.

 

Chevre  Also from pasteurized goats’ milk from the Bylers.  This is a semi soft cheese similar in texture to cream cheese, but with a little more acidity.  It’s great as a spread or in salads.  You can easily mix herbs, nuts, or dried fruits into it and create spreads or dips.  $6/half lb.

 

Aged Cheddar  Made from organic raw milk from grass based dairy.  Cheesemakers Melanie and Mark Dietrich of Keswick Creamery  age all their cheeses a minimum of 60 days.   $6.50/half lb.

 

Lesher  Also from Keswick aged 60 days.  Unique hard cheese similar to an aged parmesan or similar somewhat sharp well aged cheese.  One of our favorites.  $7.50/half lb.

 

Blue Suede Moo  Raw milk aged bleu cheese from Keswick Creamery  $5/quarter lb. We’re hoping this fine bleu works out this season. Because the cows are eating different grasses through the summer, it’s hard to maintain consistency. 

 

Alpenkase    An extraordinary Ementaller/Swiss type cheese from another group of Amish.  Alpenkase -literally—“mountain cheese”.  This is the only PA swiss type cheese we’ve tasted which we’ve liked.   $7/half lb.

 

Camembert  From raw organic milk and aged 60 days.  The Deans (Pasture Maid Creamery) produce an exquisite raw milk camembert cheese on their grass based dairy farm-- it’s so fresh! Camebert is in prime condition for just a week. Adam’s is made in very small batches and sold immediately. $10/half pound wheel.
