2011  Cheeses

 

 

2011 Cheese delivery schedule:  We'll post this as we figure it out.

 

Feta  This is made from pasteurized goats’ milk from the Amish family of Sam Byler.  An excellent feta, good for salads and many Greek and other Mediterranean dishes.  $6/half lb.

 

Chevre  Also from pasteurized goats’ milk from the Bylers.  This is a semi soft cheese similar in texture to cream cheese, but with a little more acidity.  It’s great as a spread or in salads.  You can easily mix herbs, nuts, or dried fruits into it and create spreads or dips.  $6/half lb.

 

Aged Cheddar  Made from organic raw milk from grass based dairy.  Cheesemakers Melanie and Mark Dietrich of Keswick Creamery  age all their cheeses a minimum of 60 days.   $6.50/half lb.

 

Lesher  Also from Keswick aged 60 days.  Unique hard cheese similar to an aged parmesan or similar somewhat sharp well aged cheese.  One of our favorites.  $7.50/half lb.

 

Blue Suede Moo  Raw milk aged bleu cheese from Keswick Creamery  $5/quarter lb. We’re hoping this fine bleu works out this season. Because the cows are eating different grasses through the summer, it’s hard to maintain consistency. 

 

Swiss-- This is an excellent and consistent cheese--not easy with swiss types.   $7/half lb.
