Apple and Cider Pie--Bake 2 pie shells. (Putting a layer of dried beans in the bottom keeps the shell from mis-shaping while baking)  Cook 6 c. sliced apples, 1 t. cinnamon, nutmeg, and 1 1/2c. brown sugar in 1 1/2 c.cider until tender.  Grate orange rind on top to taste.  Then mix 3 pkg. gelatin into 1 1/2 c. cider; let sit 1 min. then add to apple mix and pour into pie shell.  Chill until set.  (Almonds can also add interest.)
