Pancakes or Waffles: Sift 2 c. flour (can be 1/2+ wholewheat or all whole wheat if using bread flour), 3 tsp. baking powder, 1/2 tsp salt.  Add two beaten eggs (or I them add to dry ingredients, tilt bowl, and beat them separately).  Then mix in enough milk to make a nice batter--maybe 2 cups+-.  Add fresh or frozen blueberries or small chunks of apple for something different.
