Beets:
Cut off the tops about 1/2" from the root. Boil unpeeled until tender, testing with a
fork (Don't overcook or they will taste like the yucky canned ones). Run under cold water till they can be
handled and slip the skins off. They
can then be used in any beet dish. The
first ones we like to slice and add to salads to substitute for tomatoes in
color.
