Thai Carrot Salad With Peanuts
Blend: 1/4 cup rice vinegar, 3 Tbsp fresh lime juice, 1 Tbsp fresh orange juice, 1 Tbsp grated orange zest (i.e. orange peel), 1 Tbsp chopped fresh cilantro, 3 Tbsp pure maple syrup, 1/4 tsp red chili flakes (to taste)
Grate 3 C carrots into a large bowl. Add half the dressing, saving the rest for another use. (It will keep, refrigerated,
for up to 1 week.) Marinate the salad for 15 to 20 minutes before serving. Garnish with 1 C chopped peanuts &mint.
