Pasta w/ white beans, carrots & pesto:  In large bowl place 1 cup dried white beans & cover w/cold water.  Allow to stand covered for 8 hours.  Drain beans.  In large saucepan, bring 2 cups vegetable or chicken stock & 2 cups cold water to a boil.  Add 2 large carrots, diced-reduce heat, simmer until tender.  Remove carrots.  Return stock& water to a boil..  Add beans & bay leaf.  Return to boil & reduce heat to low.  Cover and simmer 45mins-1 hr. until beans are tender.  Discard bay leaf.  Cook 8 oz. penne or ziti.  Toss beans & carrots w/ pasta.  Toss w/ pesto.  Season to taste.  Serves 4.
