Swiss
Chard and Tomatoes: Saute 1 chopped onion until
soft. Add 1 c. chopped tomatoes, 1tsp.
oregano, salt and pepper, and cook 5 min.
Then add 1 bunch chopped chard (beet greens or kale) and simmer 15
min. Add water if sticking to
skillet. Add 1/4 c. chopped basil just
before serving, and sprinkle with 1/3 c. grated Parmesan cheese.
