Rice with Greens
You can add many greens to
this recipe. I use whatever I have around. I
almost always use parsley,
and always green onion.
1Tblspoon olive oil heat in
medium pot over med-high heat.
Add 3 chopped green onions,
cook until tender
Add;
2cups fresh spinach, chard,
or kale and 1/2-1cup parsley and
1/4cup celery leaves or
celery, sauté until leaves wilt 2min,
Then add, 1cup rice
uncooked, sauté another 2 min
Add; 2cups chicken or
vegetable broth and bring to a boil
Cover reduce heat and cook
for 20 min until all liquid is absorbed.
I like basmati rice but all
rice works well, time may be longer for brown
follow simmering
instructions for that particular rice. You can also use
mixed herbs about 2Tblspoons
add in with the parsley. This is a great recipe
to experiment with.
