Roasted Pepper & Tomato Pasta
with Shrimp: Make one cookie sheet of roasted tomatoes
(about 5) and roasted peppers (about 2).
Boil and peel 1/2# shrimp. Dice
and saute about 5 cloves of garlic and 1/2 c green onions sliced in rings. Add the shrimp to the garlic & onions,
then add about 12 oz bowtie pasta cooked & drained, the peppers, tomatoes
and 1/2 c chopped fresh basil.
