Spinach Balls:  Cook and drain well 10 oz. Spinach.  Saute l small onion (can substitute ¼ c. minced chives) or finely chopped scallions, in 4 tbs butter.  Mix onions, spinach, 1 c. bread crumbs, 2 beaten eggs, ¼ c. grated Parmesan, 1/4 tsp thyme, ½ tsp.salt, 1/8 tsp pepper, and ½ tsp garlic powder.  Form into walnut sized balls.  Place on cookie sheets and refrigerate at least 1 hr.(or freeze at this time) Bake 15-20 min. @350 deg.
