Spinach-Cheese
Calzones:
Make recipe of your favorite bread.
While dough is rising, doubling in bulk, prepare filling: Saute 1 c.
chopped onion in 1tbs. olive oil, then add 1# chopped spinach. Stir over high heat util spinach wilts. Stir in 4-5 mince cloves garlic and ½ tsp
salt, pepper to taste, and cook for about 2 more mins. Mix saute with 1# ricotta, ¼ c. grated
parmesan and 2 c. grated mozzarella.
Punch down dough, divide into balles and roll out into circles ¼ “
thick. Place ½-3/4 c. filling in the
circle. Fold dough over moisten the
edge with water, and crimp the edges with a fork. Use fork to prick holes here and there on the top. Arrange on oiled tray and bake for 15-20 min
@450deg. Brush with oil or butter the
last 5 min .of baking
