Spinach Salad with Pears and Rosemary Dressing: Blend 2 tbs red wine vinegar
2 tbs rice vinegar, 2 tbs vegetable broth, 1 1/2 tbs minced shallots (or
onions), 2 tsp white miso (fermented soybean paste). Mix in 1 tbs chopped
fresh parsley,1 1/2 tsp chopped fresh rosemary. Season with salt and pepper and
toss with 4 c. fresh spinach, 4 tsp.coarsely chopped toasted pecans or
walnuts. Top salads with thinly sliced
pears and crumbled blue or feta cheese.
