Spinach-ricotta
Pie: Saute 1#
finely chopped spinach and 1 onion over medium heat 5 min.,
remove
from heat. Mix in large bowl 2-3 beaten
eggs, 3 Tbs. flour, 1/2 c. grated sharp cheese, 1#ricotta cheese, 1 tspbasil,
1/2 tsp salt, pepper to taste. Mix in sauted spinach and spread into
unbaked
pie shell. Dust with paprika. (For
extra rich pie, top with 1/2 c. sour cream) Bake 40-45
min @375.
