Winter Squashes : The winter squashes--acorn, butternut, spaghetti, etc.--can be baked by cutting in half lengthwise, scooping out the seeds, and placing cut side down in a covered baking pan with enough water to barely cover the bottom of the pan and baking at 350 deg. until tender. About 30-45 min. for acorn to about an hour for larger butternuts. Test with a fork for doneness. When the squash is sweet, a little salt is all that's needed. If you prefer, or if the squash isn't the most flavorful, turn the baked halves over and brush with butter and drizzle with honey or maple syrup and bake a few minutes to allow the flavors to penetrate.
