Zucchini Curry---

 

2 tbl. ghee 1/2 tsp sugar

1/2 tsp black mustard seeds 8 cups zucchini, thinly sliced

1/2 tsp powdered cumin 1 tsp turmeric

1 tsp salt

 

1.  heat ghee and sautee mustard seeds until they dance,

 

2.  add the remaining ingredients, cover and simmer until zucchini

  is tender.

 

3.  Mash lightly.

 

makes 4 servings.

 

There is a new store in the small shopping center that used to house

"Willis" ski shop just up from the Kings Inn and 3 degree road.  It is

called "Indian Grocer" this is where you can purchase the Indian spices

etc. that you will need for these recipies----enjoy.
