Zucchini Rolls
Slice zucchini lengthwise into 1/8 inch
slices after trimming off ends. Toss
with ground black pepper and garlic powder.
Microwave on high 2-3 minutes or steam 3-4 minutes or until flexible
enough for rolling. Uncover, drain, and
toss zucchini with 2 t. lemon juice and 1 T. olive oil. Roll zucchini slices with thin slices of
proscuitto cheese, rolling to enclose the cheese. (Actually any white mild
cheese works well too.) Place these on end in a deep serving dish containing
about 1/2 inch of your favorite chunky tomato sauce. (With onions is nice.)
This can be served unheated or heated slightly. Garnish with fresh basil.
Can be made with yellow summer squash also.
